To make omelet base:

teaspoon
Italian seasoning

Salt and pepper
to season

oil
Topping:

tomato paste

cup
easy to melt pizza blend or any other easy to melt cheese
▢
½
cup
chopped green bell pepper
capsicum
▢

cherry tomatoes
sliced into circles
▢

black pitted olives
sliced into circles
▢

large green chili
finely chopped
Instructions
Lightly whisk eggs in a medium bowl. Stir seasoning into it. Season with salt and pepper.
Meanwhile heat oil in a medium frying pan over medium-high heat. Pour half of the egg mixture into the pan. Cook until it sets.
Reduce heat to low. Spread 1 tablespoon tomato paste on the omelet. Add the rest of the toppings- half of cheese and then half of veggies.
Cook, covered, until the cheese has melted and veggies are cooked. Remove from heat.
Repeat with the rest of the egg mixture and veggies.
Notes
- You could add your favorite toppings to the pizza
- Instead of making 2 pizza, you could make 4 if you like
