4cupscooked ricebasmati or long grain rice (I used basmati)
1tablespoonsoy sauce
1teaspoonsweet chili sauce
½teaspoonwhite pepper powder
Salt to taste
Spring onionschopped, to garnish
Instructions
Heat a wok over medium-high heat. Heat oil. Add sliced garlic. Saute, stirring, until golden.
Add beans and carrots, and stir-fry until tender. Stir-fry pineapple for 2 minutes. Add cooked rice. Stir-fry for 1-2 minutes or until heated through. Add soy sauce, sweet chili sauce and white pepper powder. Stir-fry for 1 minute. Check seasoning. Add more salt if needed.
To serve, transfer pineapple fried rice to serving bowls, and garnish with chopped spring onions.
Notes
You can use peanut oil in this recipe for a classic touch If you are not a strict vegetarian, add ½ cup chopped ham for more flavor You can use long grain rice or basmati rice in this fried rice
