Ingredients

Method 1:

  • 2 eggs
  • 1 tablespoon butter or oil
  • 1 bread slice cut in half
  • 1 cheese slice cut in half
  • ½ teaspoon sugar
  • Salt to taste

Method 2 (Indian bread omelet):

  • 2 eggs
  • 2 tablespoons chopped onions
  • 1 tablespoon chopped coriander cilantro leaves
  • ¼ teaspoon red chili red pepper flakes
  • 1 tablespoon butter or oil
  • 1 bread slice cut in half
  • 1 cheese slice cut in half
  • Salt to taste

Instructions

Method 1:

  • Break eggs into a small bowl. Discard shells. Season with salt. Whisk. Set aside.
  • Heat butter or oil in a small frying pan over medium heat. Pour in egg mixture. Place bread in the egg mixture so it’s coated with egg on one side. Immediately flip them over and place in the middle of the pan. Make sure the cut sides face each other.
  • When the omelet starts to set, use a spatula to flip it over. Fold the sides.
  • Place cheese slices on one side of the bread and sprinkle with sugar on the other side. Fold it again to make a sandwich.
  • Cook until both sides of the sandwich are crispy and browned.

Method 2:

  • Break eggs into a small bowl. Season with salt. Whisk.
  • Add onions, coriander (cilantro) leaves and red chili flakes. Stir to combine. Set aside.
  • Heat butter or oil in a frying pan over medium heat. Pour in egg mixture. Place the bread slices in the mixture so one side is coated with the egg mixture. Immediately flip them over and place in the middle of the pan with the cut side facing each other.
  • When the egg mixture starts to set, use a spatula to flip it over. Fold the four sides of the omelet to create a square shape. Place cheese slices on one side of the bread. Fold it again to make a sandwich.
  • Cook until both sides of the bread are crispy and golden.

Notes

- You can substitute red chilli flakes with green chilies if you like
- Substitute white bread with your favorite bread
