One Pan Dumpling Bake

Made in one pan, this hearty dumpling bake combines frozen dumplings with coconut red curry sauce for an easy weeknight dinner!

Ingredients

  • 400 ml coconut milk
  • 3 tablespoons red curry paste
  • 2 garlic cloves, minced
  • 1 cm fresh ginger, minced
  • 2 teaspoons brown sugar
  • 2 teaspoons soy sauce
  • 1 teaspoon sesame oil
  • 1 head of bokchoy, chopped
  • 400 g frozen dumpling
  • Salt to taste

To garnish:

  • Sesame seeds
  • Spring onions (scallions)
  • Chili oil (optional)

Instructions

  • Preheat oven to 180 C (350 F).
  • Place coconut milk, red curry paste, garlic, ginger, brown sugar, soy sauce and sesame oil in a deep ovenproof dish. Whisk to combine. Season with salt.
  • Add bokchoy. Arrange dumplings in a single layer. Spoon sauce over the dumplings.
  • Cover tightly with aluminum foil and bake for about 25-30 minutes.
  • Remove foil and bake uncovered for about 10 minutes or until dumplings are cooked and tops look slightly golden.
  • Garnish with sesame seeds, chopped spring onions (scallions) and chili oil (optional).

Notes

  • Coconut milk - Full fat coconut milk gives the creamiest texture to the sauce.
  • Dumplings - Use frozen dumplings. The recipe works with any type of dumplings like pork, chicken, prawn (shrimp), or vegetable.
  • Extra veggies - Spinach, pak choy, mushrooms.
