Lemon Pepper Chicken

Seasoned with lemon pepper, this succulent chicken simmered in lemon butter garlic sauce is absolutely delicious!

Ingredients

Fry chicken:

  • ¼ cup all purpose flour plain flour
  • 2 tablespoons lemon pepper seasoning
  • 2 large chicken breasts halved lengthwise horizontally
  • 2 tablespoons oil

Lemon butter garlic sauce:

  • 2 tablespoons butter
  • 2 garlic cloves chopped
  • ½ cup chicken broth stock
  • Juice of 1 lemon
  • Salt to taste

Garnish:

  • Chopped parsley
  • Freshly ground black pepper
  • Lemon wedges

To serve:

  • Buttered pasta sautéed green beans or mashed potatoes

Instructions

Fry chicken:

  • Combine together flour and lemon pepper seasoning in a large bowl. Season with salt. Coat chicken in the flour mixture. Shake off excess. Set aside.
  • Meanwhile, heat oil in a large frying pan or skillet over medium heat.
  • Add chicken. Cook, 5 minutes on each side, or until cooked through. Remove from pan. Set aside.

Lemon butter garlic sauce:

  • Add butter.
  • When hot, add garlic. Sauté, stirring, for about 1 minute or until fragrant.
  • Add chicken broth (stock) and lemon juice. Stir to combine. Simmer for about 3-4 minutes or until the sauce thickens slightly.
  • Check seasoning and add salt if needed.

Lemon pepper chicken:

  • Add chicken back to the pan. Heat through.
  • Garnish with chopped parsley, ground pepper and lemon wedges.
  • Serve with buttered pasta, sautéed green beans or mashed potatoes.
