Ingredients

  • 3 hard boiled eggs peeled and chopped
  • 1 avocado peeled and mashed
  • cup cottage cheese
  • 2 tablespoons chopped chives
  • Juice from half a lemon
  • Salt and pepper to taste
  • Turkish bread or your favorite, halved and toasted

Instructions

  • Place eggs, avocado, cottage cheese and chives in a large bowl.
  • Add lemon juice.
  • Season with salt and pepper.
  • Place one slice of bread on a flat work surface.
  • Spread with avocado egg mixture.
  • Top with another bread slice.
  • Serve immediately.
