Preheat oven to 180 C or 350 F. Grease and line a 9-inch cake tin with baking paper. Set aside.
Place eggs in a large bowl. Using an electric mixer or whisk, beat for 1 minute.
Add vanilla extract. Beat until combined.
Add sugar. Beat for 2-3 minutes or until pale and fluffy.
Add ghee and milk. Mix until just combined.
Sift in flour, baking powder and salt. Gently fold in using a spatula to create smooth batter.
Pour batter into prepared pan.
Bake until a skewer inserted in the center comes out clean, about 40-45 minutes.
Allow to cool in pan for 15 minutes. Carefully turn out on to a wire rack to cool completely.
Top with strawberries if you like.
