long grain or basmati rice

Juice of 1 small lemon

Chopped parsley leaves

Instructions
Heat olive oil in a wok or large frying pan over medium high heat.
Add garlic, onions and bell peppers (capsicum). Sauté, stirring, for about 3-4 minutes or until tender.
Add ground turmeric and paprika. Sauté, stirring, for a few seconds.
Season with salt and pepper.
Add cooked rice.
Drizzle with fresh lemon juice. Sauté, stirring, for about 2-3 minutes.
Garnish with chopped parsley.
