Ingredients

  • 1 tablespoon olive oil
  • 5 garlic cloves chopped
  • ½ cup chopped onions
  • ½ cup chopped bell peppers capsicum
  • 1 teaspoon ground turmeric
  • ½ teaspoon paprika
  • 4 cups cooked rice long grain or basmati rice
  • Juice of 1 small lemon
  • Chopped parsley leaves to garnish

Instructions

  • Heat olive oil in a wok or large frying pan over medium high heat.
  • Add garlic, onions and bell peppers (capsicum). Sauté, stirring, for about 3-4 minutes or until tender.
  • Add ground turmeric and paprika. Sauté, stirring, for a few seconds.
  • Season with salt and pepper.
  • Add cooked rice.
  • Drizzle with fresh lemon juice. Sauté, stirring, for about 2-3 minutes.
  • Garnish with chopped parsley.
