Ingredients

Marinate prawns (shrimp):

  • 500 g prawns or shrimp deveined, tails intact
  • 2 teaspoons paprika
  • 1 teaspoon cajun seasoning optional
  • Salt and pepper to taste

Garlic butter prawns (shrimp):

  • 1 tablespoon veg oil
  • 3 tablespoons butter
  • 6 garlic cloves peeled and chopped
  • 1 teaspoon red chili flakes red pepper flakes
  • 2 tablespoons chopped parsley
  • 1 tablespoon fresh lemon juice
  • Chopped parsley to garnish

Instructions

  • Marinate prawns (shrimp) with paprika and cajun seasoning (if using). Season with salt and pepper. Cover and refrigerate for 15 minutes if time permis.
  • Heat oil and 2 tablespoons butter in a large frying pan over medium heat.
  • When butter starts to sizzle, add prawns (shrimp) in a single layer.
  • Cook one side for about 3-4 minutes and then flip and cook for another 3 minutes or until the prawns have lost their translucency and turned pink.
  • Remove from pan.
  • To make the butter sauce, heat 1 tablespoon butter in a pan.
  • Add garlic and sauté, stirring, for one minute or until fragrant.
  • Add red pepper flakes (red chili flakes), chopped parsley and fresh lemon juice.
  • Bring to a boil. Simmer for about 2 minutes.
  • Add shrimp.
  • Toss in butter sauce.
  • Garnish with more chopped parsley.
  • Serve it as an appetizer, or with garlic bread / rice / noodles / pasta  and even salads.

Notes

  • You can add a little white wine to the sauce if you like. Add it to the pan after stir frying garlic to deglaze the pan.
