Easy Chicken Chow Mein | Video

This quick, easy, healthy and delicious chicken chow mein noodles is perfect as a flavor-packed weeknight dinner, and is a great way to use up leftover veggies.

Ingredients

Marinate chicken:

  • 200 g chicken breasts thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 2 teaspoons cornstarch (corn flour)

Stir fry sauce:

  • 1 tablespoon soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons rice vinegar

Noodles:

  • 2 tablespoons oil, preferrably sesame oil
  • 2 garlic cloves, crushed
  • 1 cup sliced onions
  • 1 cup shredded cabbage
  • ¼ cup carrot, cut into sticks
  • ¼ cup bell pepper (capsicum), cut into sticks
  • ¼ cup sliced spring onions (scallions)
  • 1 teaspoon ground white pepper
  • 400 g noodles, chowmein noodles preferred
  • Chopped spring onions (scallions), to garnish

Instructions

Prep noodles:

  • Prepare noodles according to package directions. Rinse with cold water. Set aside.

Marinate chicken:

  • Place chicken in a bowl. Add soy sauce, rice vinegar and cornstarch (corn flour). Coat the chicken pieces well in the marinade. Set aside.

Stir fry sauce:

  • Combine together soy sauce, dark soy sauce, oyster sauce and rice vinegar in a small bowl.

Make chow mein noodles:

  • Meanwhile, add 1 tablespoon oil to a wok over high heat. When the oil is smoking hot, add chicken. Stir fry over high heat for 2 minutes or until cooked through. Remove from heat. Set aside.
  • Add 1 tablespoon oil to the same pan. Add garlic and onions. Stir fry for few seconds or until aromatic.
  • Add the vegetables ( cabbage, carrot, bell pepper). Stir fry for 2 minutes or until the veggies are tender.
  • Add stir fry sauce, cooked chicken and noodles to the pan.
  • Add ground white pepper. Stir fry for a minute.
  • Add spring onions (scallions). Stir fry for a few seconds.
  • Garnish with more chopped spring onions.

Notes

  • Noodles - I used "ready to stir-fry" noodles which doesn't require any cooking prior to adding to the pan. Chow mein noodles is preferred in this recipe. But you can use your favorite type of noodles.
  • Soy sauce -  If dark soy sauce is not available, add more regular soy sauce.
  • Sesame oil - Use sesame oil for authentic taste.
