1packet Diana Chan’s Tandoori Chicken Dumplings or your favorite dumplings
½cupwater
Dumpling Stir Fry:
1tablespoonoil
2garlic clovesminced
2cupsdiced vegetablesbell peppers (capsicum, carrots, spring onions (scallions), broccoli)
1teaspooncornstarchcorn flour dissolved in 1 teaspoon water
1teaspoonsesame seeds
Chopped spring onionsscallions, to garnish
Crushed peanuts or cashew nutsto garnish (optional)
Instructions
Honey Soy Sauce:
Combine together honey and soy in a small bowl. Set aside.
Cook Dumplings:
Follow the package instructions to pan fry, steam, deep fry or boil the dumplings.
To pan fry the dumplings, heat 1 tablespoon oil in a large frying pan over medium heat. Cook for 2 minutes or until the base turns golden. Pour in ½ cup water, and cook, covered, for further 4-6 minutes or until water dries from the pan.
Remove dumplings from the pan. Set aside.
Dumpling Stir Fry:
Add oil to the same pan.
When hot, add garlic. Sauté, stirring, for a minute or until fragrant.
Add vegetables. Cook, stirring, for 3-4 minutes or until the veggies are tender but crunchy.
Add honey soy sauce and cornstarch (corn flour) mixture. Stir fry for 1 minute.
Add dumplings. Toss.
Sprinkle with sesame seeds. Garnish with chopped spring onions and crushed nuts if you like.
