Preheat oven to 230C / 450F. Line a baking tray with baking paper. Set aside.
Combine together flour, garlic powder and paprika in a medium bowl. Season with salt and pepper.
Whisk in milk to create thick smooth batter.
Add cauliflower florets. Toss to coat them in the batter.
Coat in breadcrumbs. Arrange the florets on the baking tray in a single layer. Bake for 25 minutes, flipping halfway through.
Meanwhile, combine together hot sauce or buffalo sauce, vegetable oil and honey in a small bowl.
Coat half baked cauliflower florets in the sauce, shaking off excess.
Place them on the baking tray in a single layer. Bake for another 20 minutes.
Serve with ranch dressing or your favorite dip.
