Creamy Spicy Mushrooms

Ingredients

  • 1 tablespoon olive oil
  • 250 g mushrooms sliced
  • 2 tablespoons butter
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1 tablespoon dried oregano
  • 1 tablespoon parsley
  • 1 teaspoon dried red pepper chili flakes
  • 1 teaspoon cayenne pepper
  • cup fresh cream
  • Chopped parsley to garnish
  • Salt and pepper to taste
  • Crusty bread pasta, rice, or grilled meat, to serve

Instructions

  • Place a frying pan or skillet over low heat.
  • Add olive oil.
  • When hot, add mushrooms. Season with salt.
  • Sauté, stirring occasionally, for about 10 minutes or until they are are tender, release juices, and most of the juice cook away. Remove from pan. Set aside.
  • Add butter to the pan over medium heat.
  • When melted, add onions and garlic.
  • Cook, stirring occasionally, for about 2-3 minutes or until the onions are soft and garlic is fragrant.
  • Add mushrooms, dried oregano, parsley, red chili flakes, and cayenne pepper. Stir to combine. Season with salt and pepper.
  • Sauté, stirring, for about 1 minute.
  • Stir in cream. Simmer for about 2-3 minutes.
  • Garnish with parsley.

Notes

  • For cheesy mushrooms, add grated parmesan
  • Make sure you use plenty of butter for flavor
