In a large bowl, combine together chicken mince, tomato sauce, soy sauce, breadcrumbs, and coriander leaves. Season with salt and pepper. Make 6 round patties out of the mixture. Set aside.
Meanwhile, heat oil in a frying pan over medium-high heat. Arrange the prepared patties in the pan in a single layer. When one side is cooked, flip over to cook the other side. Drain the cooked patties on an absorbent paper towel.
Spread mayonnaise on the bottom layer of the bread rolls. Then top with cooked patties, cucumber, and lettuce. Place a coriander leaf on each patty, and place the upper layer of the bread rolls on top.
