This classic tempura dipping sauce is the unique combination of three traditional Japanese sauces – dashi (soup base), mirin and soy sauce. Sake is a great substitute for mirin, however, add a little sugar to the mix for perfect flavor.
Tempura Dipping Sauce Recipe
Ingredients – First, the Japanese soup base stock. It’s easily available in the Asian section of your local grocery store. As some soup bases are concentrated mixes, remember to follow the package directions. Apart from dashi, you will also need mirin or sake and soy sauce. Soy sauce is already loaded with salt, so remember to add less salt to the dipping sauce. If you are using sake, make sure you add a pinch of sugar to the mixture.
Boil the sauce – The second step is to cook the sauce for a few minutes. Boiling is crucial to remove the alcohol content of the sauce, mainly from sake or mirin. You can even store it in the refrigerator for a few days.

Ingredients
- 3/4 cup dashi (Japanese soup base sauce)
- 1 tablespoon soy sauce
- 1 tablespoon mirin or sake (I used mirin)
- 1/2 teaspoon salt
Instructions
- Add dashi, soy sauce, mirin or sake and salt to a small saucepan.
- Stir to combine.
- Place the pot over medium heat.
- Allow the mixture to come to a boil.
- Simmer for one minute or until the alcohol smell disappears.
- Serve hot.
- Store in an airtight container in the refrigerator for a week.
Notes
- For gluten free alternative of soy sauce, use tamari
- If using sake, add a pinch of sugar
- You can add condiments like grated ginger or daikon
