How To Make Portuguese Orange Cake
Start with sifting the dry ingredients- flour, baking powder and salt- into a bowl. The second step is combining all the wet ingredients. First, beat the eggs until combined, and then beat in the sugar. When the mixture turns pale, you can add in flour mixture and olive oil. Add them alternatively so the flour mixture is incorporated into the cake batter.
Next up, add in the key flavors – orange zest and orange juice. The lovely orange flavor comes from 4 large oranges in this recipe. Ideally, you’ll need approximately 1 cup of orange juice in the batter. So, you’ll need about 4-5 oranges depending on their size.
Once the batter is ready, pour it into a cake tin, and bake for about 1 and 1/4 hours. If the top of the cake starts to brown before the inside cooks, cover the tin lightly with aluminum foil.
Serve this Portuguese orange cake sprinkled with powdered (icing) sugar and a dollop of whipped cream. Yum!
