
Summer. The perfect season to grow your own vegetables. Sowing seeds, waiting for the tiny sprouts, watching them grow into big plants, harvesting. There’s something really special about all those little wonders of nature.
We’d so much fun sowing some okra seeds last spring. Fast forward three months, and voila, we’re blessed with okras – plenty of them – big and small. Thanks to my little ones who never forgot to water them.
This okra masala is loaded with okras cooked to perfection with just the right amount of spices. This curry is so simple and so delicious that you’ll find yourself making it again and again.


Okra Masala | Vendakka Masala
This delicious okra masala is a perfect side dish for rice or roti.

Ingredients
- 10 okras cut into 2cm pieces (discard the ends)
- 1 small onion sliced
- 1 small tomato sliced
- 4-5 small green chillies slit in halves
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- ¼ teaspoon ground turmeric
- 1 and ½ teaspoon ground coriander
- 1 teaspoon garam masala
- ½ teaspoon chilly powder
- 2 tablespoon coconut milk
- 1 sprig curry leaves
- Water
- Salt to taste
- Rice or roti to serve
Instructions
- Heat oil in a pan over medium-high heat. Splutter mustard seeds. Add onion, and sauté for 2 minutes, stirring occasionally, until it turns light brown. Add green chillies and curry leaves. Saute for few seconds. Add ginger paste and garlic paste. Saute for another minute, stirring occasionally. Reduce heat to low. Add ground turmeric, ground coriander, garam masala, and chilly powder. Saute for few seconds, stirring continuously. Add tomatoes, and sauté until it starts to break down.
- Increase the heat to medium-high. Add okras and enough salt. Mix well. Add enough water. Cook, covered, for 4-5 minutes. Stir occasionally. Add coconut milk. Mix well. Simmer for another minute. Remove from flame.
