Everything I cook is brimming with tangy lemon flavor these days, thanks to my lemon trees overflowing with these gorgeous yellow fruits. While they add the optimum flavor to the cake, this recipe is all about making your favorite lemon cake in a mug.
This lemon mug cake is super simple to make but comes with a slight twist. It can be easily made in a mug in the microwave. No oven preheating or lining cake tins – it’s so simple. Just mix all the ingredients in a bowl, transfer to a mug and pop in the microwave. Delicious cake in 90 seconds that’s super moist and fluffy. What more could you ask for?
First things first. Get a clean bowl. Make sure the bowl is completely dry. Place all the dry ingredients in the bowl. This includes self raising flour, sugar and a pinch of salt. Give this a quick whisk just to combine all the ingredients and make a well in the center. Now, crack the eggs in, add a splash of milk, and grate and juice a lemon to go into the batter. You’ll also need to melt some butter and let it cool down completely before adding to the lemon mug cake batter.
Next step – mix all the ingredients until you get a smooth batter with flowing consistency. Remember no over mixing though. Transfer this to a 500ml capacity microwaveable cup and pop in the microwave. Set the timer for 90 seconds and watch the magic. The batter will rise and cook to create beautifully moist and delicious cake. And be sure to garnish it with your favorite toppings – lemon curd, whipped cream or even melted white chocolate. I like to keep it simple with a slice of lemon on top.

Moist lemon cake for one made in microwave in just 90 seconds!
Ingredients
- 4 tablespoons self raising flour
- 2 tablespoons granulated (caster) sugar
- A pinch of salt
- 1 egg, at room temperature
- 3 tablespoons melted and cooled butter
- 3 tablespoons milk
- 1 tablespoon lemon juice
- ½ teaspoon lemon zest
Instructions
- Place flour, sugar and salt in a medium bowl. Whisk to
combine. Make a well in the center. - Add egg, butter, milk, lemon juice and lemon zest. Whisk to make smooth batter.
- Pour batter into a 500ml capacity microwave safe mug.
- Place mug in microwave. Microwave on high for 90 seconds.
- Add your favorite toppings – melted white chocolate, lemon curd, whipped cream.
- Serve immediately.
