It doesn’t matter whether you are cooking for two or ten. Grilled Salmon with Mashed Potato is a simple and healthy dish that will only take 30 minutes to reach the table. This is one dish that I cook again and again especially on a busy day. The creamy potato mash is a great accompaniment, but you can try some steamed vegetables as well.

Grilled Salmon with Mashed Potato

Ingredients
- 2 salmon fillets, skin on
- Salt
- Freshly grated black pepper
For mashed potato:
- 4 medium potatoes
- Rind of 1 small lemon
- About ¼ cup milk
- Salt
- Freshly grated black pepper
Instructions
- Coat the fish fillets with salt and black pepper, and cook on a preheated grill. Alternatively, you can also pan fry them.
- Meanwhile, peel the potatoes and cut them into cubes. Put them in a saucepan along with plenty of water. Add some salt, and place it over high heat. Allow the potatoes to cook. You can also cook whole potatoes, and then peel off the skin once it’s cooled down. But the former method will save your time. Once the potatoes are cooked, mash them. Mix in lemon rind. Add enough milk to make the potatoes creamy. Add more salt and black pepper if desired.
- To serve, place the grilled salmon on a bed of mashed potato.
