This gluten free banana fritters is very easy to make.

Ingredients
- 2 small lady finger bananas peeled and mashed
- 5 tablespoon tbsp gluten free corn flour
- 3 tablespoon caster sugar
- 2 tablespoon milk
- A good pinch of cardamom powder
- ⅓ cup desiccated coconut
- 1 teaspoon sultanas or raisins chopped
- ¼ teaspoon bicarb soda
- Oil for deep frying
Instructions
- In a small bowl, combine all the ingredients except oil. Keep aside for 10-15 minutes.
- Heat oil in a deep pan, and spoon in the mixture into hot oil. (If the mixture splits, it indicates that the batter is not thick enough. If so, add more corn flour to make it thicker). Fry until all sides of the fritter has turned golden brown. Remove from oil, and drain on an absorbent towel.
