Over the years I’ve tried countless rice recipes. Personally, I feel that it’s impossible to point at a recipe, and say “this is the best”. Each one is delicious in its own way. Do you agree?
This ghee rice is not an exception. It is always a winning option as a weeknight meal, and even as a party food. It is so easy to prepare and doesn’t demand hours in the kitchen. Serve with any curry of your choice, and raita if you prefer. Enjoy!

Ghee Rice (Neychoru)
This ghee rice is very easy make and extremely flavorful.
Ingredients
- 2 cups basmati rice
- 3 tbsp ghee
- ¼ tsp fennel seeds
- 6 cloves
- 1 cinnamon stick, broken into 2-3 pieces
- 1 bay leaf
- 2 cardamom pods
- 2 medium onions, thinly sliced
- 4 cups water
- Salt to taste
- 2 tbsp raisins
Instructions
- Soak rice in water for 30 minutes. Set aside.
- Meanwhile, heat 1 tbsp ghee in a frying pan, and fry half of the sliced onions until golden brown. Set aside. Add raisins to the same pan, fry, and set aside.
- Place a heavy bottomed pan on the flame, and heat 2 tbsp ghee. Throw in the fennel seeds, and let them pop. Add cloves, cinnamon stick, bay leaf and cardamom pods, and fry for a while. Then fry the rest of the sliced onions until translucent. Now it’s time to add 4 cups of water, and bring to the boil.
- Meanwhile, drain water from the soaked rice, and wash it 2-3 times. Add rice to boiling water along with enough salt. Give it a quick stir, and bring to the boil again.
- Now reduce the heat to medium, and cover with a lid. Cook rice until done.
- To serve, transfer ghee rice to a deep bowl, and garnish with fried onions and raisins.
