Ghee Rice (Neychoru)

This ghee rice is very easy make and extremely flavorful.

Ingredients

  • 2 cups basmati rice
  • 3 tablespoon ghee
  • ¼ teaspoon fennel seeds
  • 6 cloves
  • 1 cinnamon stick broken into 2-3 pieces
  • 1 bay leaf
  • 2 cardamom pods
  • 2 medium onions thinly sliced
  • 4 cups water
  • Salt to taste
  • 2 tablespoon raisins

Instructions

  • Soak rice in water for 30 minutes. Set aside.
  • Meanwhile, heat 1 tablespoon ghee in a frying pan, and fry half of the sliced onions until golden brown. Set aside. Add raisins to the same pan, fry, and set aside.
  • Place a heavy bottomed pan on the flame, and heat 2 tablespoon ghee. Throw in the fennel seeds, and let them pop. Add cloves, cinnamon stick, bay leaf and cardamom pods, and fry for a while. Then fry the rest of the sliced onions until translucent. Now it’s time to add 4 cups of water, and bring to the boil.
  • Meanwhile, drain water from the soaked rice, and wash it 2-3 times. Add rice to boiling water along with enough salt. Give it a quick stir, and bring to the boil again.
  • Now reduce the heat to medium, and cover with a lid. Cook rice until done.
  • To serve, transfer ghee rice to a deep bowl, and garnish with fried onions and raisins.
