Garlic Butter Breakfast Croissanwich Recipe
Toast croissants – Although this sandwich is perfect as it is, I like to take it the next level with a generous addition of garlic butter. Yes, the classic combination of melted butter, minced garlic, chopped parsley and a touch of salt. Mix all the ingredients together and brush the croissants with this mixture. These croissants go straight into the oven and bake until you get that crispy, golden texture.
Key elements – This croissanwich consists of five totally different elements that are sandwiched between two halves of crispy golden croissants. The first layer is a generous spread of mayo. I opted for the regular mayonnaise but feel free to use flavored ones for next level flavor.
Sandwiches are not complete with vibrant veggies, right? Romaine lettuce and sliced tomatoes are imperative in this sandwich. It’s then topped with crispy bacon followed by fluffy scrambled eggs. If you are not a huge fan of scrambled eggs, opt for fried eggs or grated boiled eggs. Top with more lettuce and tomatoes or even sliced avocados.

Layers of fluffy eggs, crispy bacon, cheese and lettuce sandwiched between garlic butter toasted croissants make this croissanwich so delicious!
Ingredients
Toast croissants:
- 4 croissants
- 100 g unsalted butter, melted
- 2 garlic cloves, peeled and minced
- 1 tablespoon chopped parsley
- Salt to taste
Scrambled eggs:
- 4 eggs
- 1 tablespoon milk
- Salt to taste
- 1 tablespoon butter
Cook bacon:
- 2 teaspoons oil
- 4 bacon strips
Assemble croissanwiches:
- 1/4 cup mayonnaise
- 4 romaine (cos) lettuce leaves
- 8 tomato slices
- 4 cheese slices (American or cheddar)
Instructions
Toast croissants:
- Preheat oven to 180 C / 350 F. Line a baking tray with baking paper.
- Cut the croissants horizontally into halves. Set aside.
- Combine together melted butter, garlic and chopped parsley in a small bowl. Season with salt.
- Place the croissants, cut sides down, on the baking tray. Brush croissant halves with garlic butter. Bake for about 4-6 minutes or until golden.
Make scrambled eggs:
- Lightly whisk the eggs with milk. Season with salt.
- Heat a small frying pan over medium heat-high heat.
- Add butter. When hot, pour in egg mixture and let it sit for 15 seconds. Stir with a spoon, lifting and folding it over from the bottom of the pan. Repeat the process until the eggs are soft but slightly runny. Remove from heat.
Cook bacon:
- Heat oil in the frying pan over medium heat. Add bacon strips. Cook, flipping and turning, for about 2-3 minutes or until browned evenly. Slice and set aside.
Make croissanwich:
- Spread the croissant halves with mayonnaise. Place one bottom croissant half on a flat surface. Spread with mayonnaise. Top with lettuce, tomatoes, bacon and scrambled eggs and cheese slices. Place the top half of croissant over the cheese slices.
Repeat with the remaining croissants and sandwich filling. Serve immediately.
