Baking cakes is something I love, but baking cakes with fresh seasonal fruits is even better. Summer fruits especially peaches are one my absolute favorite fruits to incorporate into homemade cakes. The delicate flavor of this fruit goes hand in hand with the simple ingredients used in my favorite basic cake batter.
Of course, peaches add a serious wow factor to this easy peach cake recipe. I really want to emphasize the beauty of summer peaches. So in this case, the idea is more is better. Plenty of chopped peaches are added to the cake batter which will certainly make the cake super moist and ultra flavorful.
Basically, this cake all about simplicity. You don’t need to think about add-ons like icing. And that one feature makes this cake so perfect for your afternoon tea or light snack. To me, it’s a simple cake adorned with peaches, and totally yum.
To start with, sift all the dry ingredients into a small bowl. The dry ingredients include a few pantry staples like flour, baking powder and a touch of salt. As you know, these are the necessary ingredients in any cake recipe.
Next, combine all the other ingredients in another bowl. Cream together butter and sugar followed by incorporating eggs into the mixture one at a time. Make sure the eggs are well combined but avoid over beating. Remember over beating the batter will make the cake very dense and heavy. “Just combined" is the keyword here.
A dash of vanilla extract and a pinch of lemon zest work wonders in this easy peach cake recipe. Finally, add in the flour mixture in batches, and beat until just combined. At this stage, the batter will be super thick which is totally fine. The liquid content in the chopped peaches will make the cake really moist.
To make this easy peach cake extra fancy, sprinkle some confectioner’s sugar or icing sugar on top of the cake. It’s addicting and delicious. Plus, the fresh aroma of this cake is totally mesmerizing.

Easy Peach Cake | Video
Easy and delicious peach cake recipe. Made from scratch, this cake is perfect for your afternoon tea.
Ingredients
- 1 ¾ cups all-purpose (plain) flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 125 g softened butter
- 1 cup granulated (caster) sugar
- 2 eggs, at room temperature
- 1 teaspoon vanilla extract
- ½ teaspoon grated lemon zest
- 1 ¼ cup pitted, peeled and chopped peaches
Instructions
- Preheat oven to 180 C or 350 F. Grease a 22cm round springform cake tin and line with baking paper. Set aside.
- Sift together flour, baking powder and salt into a medium bowl. Set aside.
- Place butter and sugar in another bowl. Beat until pale and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla and lemon zest. Beat until combined.
- Add half of flour mixture. Beat until combined. Add remaining flour mixture. Beat until combined. Using a spatula, fold in chopped peaches.
- Transfer the thick cake batter to the cake tin. Bake for 1 hour or until a skewer inserted into the center the cake comes out clean.
- Remove cake from oven and allow to cool for 10 minutes. Turn on to a wire rack and allow to cool completely.
- Dust with confectioner’s (icing) sugar if desired.
