When it comes to vegetarian side dishes, nothing beats a simple curry full of spices. Adding a healthy touch to your everyday meal, they can be easily customized to include the seasonal produce. Of course, it’s the easiest way to eat smart and healthy.
Well, if you love okra (also called bhindi in Hindi), here’s an amazingly delicious recipe that incorporate two nutritious ingredients- okra and yogurt (dahi). Dahi bhindi. Simple sauteed okra in delicious yogurt sauce. Sounds yum, right?
Okra sauteed in oil certainly make them super crisp but less slimy. This recipe is for everyone who hate slimy okra. Obviously, a quick stir fry is the real secret to keeping your okra slime-free. This simple trick is guaranteed to make you fall in love with this amazingly green veggie again and again.
Remove fried okra from the pan, we’ll be adding this to the curry at a later stage of the cooking process. To make dahi bhindi, first, crackle some cumin seeds followed by sauteeing the garlic and ginger . Personally, I really love garlic and ginger flavors in okra. It certainly works as a base to highlight the beautiful natural flavor of okra.
Next up, tomato paste. Apart from yogurt, tomatoes also add a slight tangy taste to the curry. But make sure it doesn’t overpower the core ingredient, in this case, okra. You’ll also need to add a few ground spices like turmeric, coriander, garam masala and red chili powder.
Now that you have the base of dahi bhindi, let’s move on to the second part of this recipe. At this stage, fried okra and yogurt goes into the curry alongside crushed dried fenugreek leaves. Make sure you cook over low flame and stir constantly to ensure thick and creamy sauce.
With only a few ingredients, this is the perfect side dish for a healthy meal. I love to serve this with rice or roti. Delicious!

Ingredients
Fry okra:
- 1 tablespoon oil
- 14 okra (bhindi), ends trimmed and chopped into 5cm pieces
Dahi bhindi:
- 1 tablespoon oil
- ½ teaspoon cumin seeds
- 1 small onions, finely chopped
- 1 teaspoon chopped ginger
- 1 teaspoon chopped garlic
- 2 tablespoon tomato paste (tomato purée)
- ¼ teaspoon ground turmeric (turmeric powder)
- ½ teaspoon ground coriander (coriander powder)
- ½ teaspoon red chili powder
- ¼ teaspoon garam masala
- ½ cup yogurt, lightly whisked
- ¼ teaspoon crushed dried fenugreek leaves (kasuri methi)
Instructions
Fry okra:
- Heat oil in a frying pan over medium-high heat. Add okra. Sauté, stirring occasionally, for 6-8 minutes or until okra is tender and changes color.
Dahi Bindhi:
- Heat 1 tablespoon oil in a frying pan over medium-high heat. Add cumin seeds. Allow to splutter. Add chopped onions. Sauté, stirring occasionally, for 2-3 minutes or until soft and translucent.
- Add ginger and garlic. Sauté, stirring occasionally, for 2-3 minutes or until aromatic. Add tomato paste. Fry for a minute or until oil appears. Add ground turmeric, ground coriander, red chili powder and garam masala. Sauté, stirring, for 1 minute.
- Add fried okra. Season with salt. Stir to combine. Reduce heat to low. Stir in yogurt. Add dried fenugreek leaves. Simmer, stirring constantly, for 4-5 minutes or until the sauce starts thicken.
