How to make Kucchi (Kutchi) dabeli at home
Well, here’s the recipe. Start with the chutneys - red chili garlic chutney and tamarind chutney. Both chutneys are super simple to make with a few basic ingredients. Best part? They can be stored in the refrigerator for a week so you can enjoy your favorite chaats. While the fiery red chili chutney is made with dried red chilies and garlic, tamarind, dates, and jaggery are the main components of the sweet and tangy tamarind chutney.
The most important element that makes this classic recipe - homemade dabeli masala. A simple combo of aromatic spices like coriander, cumin, cloves, cinnamon, cardamom and red chilies. But hey, if you are short on time, store bought dabeli masala is your best friend.
To make the potato mixture for the filling, cook mashed potatoes with dabeli masala and a few teaspoons of tamarind chutney. Once this mixture is cooled completely, garnish with red onions, masala peanuts, pomegranate seeds, coriander (cilantro) leaves.
The best vegetarian (or vegan) burger
Coming to the final step of the recipe - assembling the burger. First, spread both the burger buns with chutneys. Top the base of bun with potato mixture. I like to add more onions and pomegranate seeds. Roll the burgers in sev.

Ingredients
Chili garlic chutney:

Tamarind chutney:

Dabeli masala:
- 2 teaspoon coriander seeds
- ½ teaspoon cumin seeds
- 3 cloves
- ½” cinnamon stick
- 1 small dried red chili
- 1 black cardamom pods
- 2 green cardamom pods
Masala peanuts:
- 2 teaspoon oil
- ¼ cup peanuts
- ¼ teaspoon red chili powder
- ¼ teaspoon chaat masala
- Salt to taste
Potato mixture:
- 1 tablespoon oil
- ¼ cup chopped onions
- 4 large potatoes, peeled, cooked and mashed
- 2 tablespoons tamarind chutney
- 3 teaspoon dabeli masala
- 3 tablespoons chopped red onion
- 2 tablespoons pomegranate arils
- 3 tablespoons masala peanuts
- ¼ cup chopped coriander (cilantro) leaves
- Salt to taste
Dabeli:
- 6 ladi pav or burger buns, halved
- ½ cup sev or fried chickpea noodles

Dabeli masala:
- Place coriander seeds, cumin seeds, cloves, cinnamon stick, dried red chili and cardamom pods in a frying pan over low heat. Roast, stirring, for 1-2 minutes or until lightly browned. Allow to cool completely. Transfer to a food processor. Process to a fine powder. Set aside.
Masala peanuts:
- Heat oil in a frying pan over low heat. Add peanuts. Add chili powder. Season with salt. Stir fry for 1-2 minutes or until lightly browned. Sprinkle with chaat masala. Set aside.
Potato mixture:
- Heat oil in a frying pan over medium heat. Add onions. Sauté, stirring occasionally, for 2-3 minutes or until soft and translucent. Add mashed potatoes, tamarind chutney and dabeli masala. Season with salt. Sauté, stirring occasionally, for 3-4 minutes. Allow to cool completely.
- Transfer the mixture to a bowl. Garnish with red onions, masala peanuts, pomegranate seeds and chopped coriander (cilantro) leaves.
Dabeli:
- Spread red chili chutney on one side of the buns and tamarind chutney on the other side. Top base of the burger with potato mixture. Place the top of the bun on the top. Roll the burger in sev. Repeat with the rest of the burger buns.
