How to make Kucchi (Kutchi) dabeli at home
Well, here’s the recipe. Start with the chutneys – red chili garlic chutney and tamarind chutney. Both chutneys are super simple to make with a few basic ingredients. Best part? They can be stored in the refrigerator for a week so you can enjoy your favorite chaats. While the fiery red chili chutney is made with dried red chilies and garlic, tamarind, dates, and jaggery are the main components of the sweet and tangy tamarind chutney.
The most important element that makes this classic recipe – homemade dabeli masala. A simple combo of aromatic spices like coriander, cumin, cloves, cinnamon, cardamom and red chilies. But hey, if you are short on time, store bought dabeli masala is your best friend.
To make the potato mixture for the filling, cook mashed potatoes with dabeli masala and a few teaspoons of tamarind chutney. Once this mixture is cooled completely, garnish with red onions, masala peanuts, pomegranate seeds, coriander (cilantro) leaves.

Coming to the final step of the recipe – assembling the burger. First, spread both the burger buns with chutneys. Top the base of bun with potato mixture. I like to add more onions and pomegranate seeds. Roll the burgers in sev.
