Accordion potatoes. The ultimate fun way to create the best potato side dish. This delicious side gets all the extra flavors from a generous addition of garlic butter spiked with cajun seasoning. With crispy edges and soft center, this is definitely the potato dish of your dreams.
Ideally, potatoes appear on your dinner table as mashed, roasted or whipped. But making it aesthetically pleasing is a tricky business. Luckily, there’s an easy way to bring in more creativity to your favorite humble potatoes. Trust me, this only requires minimal effort on your part.
Accordion potatoes. The beautiful viral potato recipe you must try at home. These are so pretty, you will want to make them again and again. Best of all, you are going to be addicted to the crispy outer texture of the potatoes. And obviously, that’s my most favorite thing about these potatoes.
How To Make Accordion Potatoes
First, peel and cut the potatoes into squares. Now, cut them in straight lines on one side, flip, and cut again diagonally on the other side. Do not cut all the way through. You can use skewers or chopsticks placed on both sides of the squared potatoes to get the perfect cut.
You will also need to brush the potatoes with a beautiful garlic butter mixture. A combination of garlic, melted butter, dried oregano and cajun seasoning. Don’t forget to season with a little salt and pepper. The garlic butter mixture is the base of the marinade. To this, you can add any seasoning like cajun, paprika and red chili powder.
Finally, bake. The crispy edges look simply amazing. So good!

Crispy Accordion Potatoes | Video
Crispy and delicious accordion potatoes flavored with garlic butter and cajun seasoning
Ingredients
- 1/4 cup melted butter
- 1 teaspoon minced (grated) garlic
- 1/2 teaspoon dried oregano
- 1 teaspoon cajun seasoning
- 4 large potatoes
- Salt and pepper to taste
Instructions
- Preheat oven to 200 C / 400 F. Line a baking tray with baking paper.
- To make garlic butter mixture, combine together melted butter, garlic, dried oregano and cajun seasoning. Season with salt and pepper. Set aside.
- Peel the potatoes. Cut them into 2 cm thick vertical slices.
- Place one slice of potato flat on a work surface.
- Place two skewers on both sides of the potato.
- Starting from one end, slice the potato thinly vertically.
- Flip the potato. Slice again diagonally. Repeat with the remaining potatoes.
- Arrange potatoes in a single layer on a baking tray.
- Brush with garlic butter mixture on both sides.
- Bake for about 40 minutes or until the potatoes get crispy edges and golden center.
Notes
- Cajun seasoning can be substituted with Chinese five spice, paprika, red chili powder or curry powder
- Garnish with fresh chopped parsley
- Substitute butter with oil if you like
- Serve with ketchup, sriracha mayo, bbq or ranch sauce
- You can cook this in air fryer at 375F for 15-17 minutes
- Sweet potatoes are a great substitute for potatoes in this recipe
