Preheat oven to 200 C / 400 F. Line a baking tray with baking paper.
To make garlic butter mixture, combine together melted butter, garlic, dried oregano and cajun seasoning. Season with salt and pepper. Set aside.
Peel the potatoes. Cut them into 2 cm thick vertical slices.
Place one slice of potato flat on a work surface.
Place two skewers on both sides of the potato.
Starting from one end, slice the potato thinly vertically.
Flip the potato. Slice again diagonally. Repeat with the remaining potatoes.
Arrange potatoes in a single layer on a baking tray.
Brush with garlic butter mixture on both sides.
Bake for about 40 minutes or until the potatoes get crispy edges and golden center.
