How To Make Creamy Tomato Pasta
Start with sautéing chopped onions in a little butter and olive oil. I like to use a combination of butter and olive oil as butter adds so much flavor to this dish. However, if you are after healthy eating, substitute with oil.
Next up, add in some garlic and sauté until fragrant. Stir fry tomato paste followed by canned tomatoes. Give it a stir, and simmer until the tomatoes are cooked and the sauce is really thick. At this stage, you can also cook the pasta. Make sure you reserve a cup of the pasta water.
The next step of making this creamy tomato pasta is the addition of cream, Italian seasoning and a dash of pasta water. Remember to stir continuously while adding the cream. I love the way the beautiful luscious cream create swirls and disappears into the tomato sauce to make that vibrant color.
Simmer this sauce for 3-4 minutes and stir in cooked pasta, cheese and parsley. Depending on what you have on hand, you can use parsley or basil in this recipe.

Vibrant and creamy weeknight pasta loaded with the goodness of tomatoes
Ingredients
- 350 g your favorite pasta (I used spirals)
- 1 tablespoon butter
- 2 teaspoons olive oil
- 1 cup chopped onions
- 1 garlic clove, peeled and minced
- 2 tablespoons tomato paste
- 1 can (400g) crushed tomatoes
- ½ cup heavy (thickened) fresh cream
- 1 teaspoon Italian seasoning
- 1 cup grated parmesan
- ¼ cup chopped parsley or basil
- Grated parmesan, to garnish
- Chopped parsley, to garnish
Instructions
- Cook pasta according to the package instructions. Boil water in a large pot. Season with salt. Add pasta. Cook for about 7-8 minutes or until al dente. Drain. Set aside.
- Meanwhile, heat butter and oil in a large frying pan over
medium-high heat. Add onions. Saute, stirring occasionally, for about 2-3 minutes or until soft and translucent. - Add garlic. Saute, stirring, for 1 minute or until fragrant.
- Add tomato paste. Saute, stirring, for about 2 minutes.
- Add canned tomatoes. Stir to combine. Stir continuously and add cream. Stir in Italian seasoning.
- Season with salt and pepper. Add 1 cup pasta water. Simmer for about 3 minutes.
- Add cooked pasta, parmesan and parsley or basil. Stir. Heat through.
- Garnish with grated parmesan and and parsley.
