Creamy tomato chicken. Simple pan fried chicken is great, but chicken in tomato sauce is even better. Chicken is simply marinated in a few spices, pan fried and then cooked in a delicious sauce loaded with tomatoes. The lusciousness of fresh cream make it rich and tasty.
Creamy Tomato Chicken Recipe
Marinate chicken. If you are using chicken breasts, slice them horizontally so you’ll get thin slices. Then, marinate chicken with a little garlic powder, paprika, cayenne pepper and a touch of Italian seasoning. I also like to add a generous amount of olive oil. Don’t forget to season with salt and pepper.
Pan fry chicken. Get a large skillet, place it over medium high heat and pour in about 1 tablespoon of olive oil. Cook the chicken for about 5 minutes on each side. Remember the cooking times may vary depending on the size of the chicken pieces. Before you remove chicken from the pan, make sure it’s cooked through and the internal temperature reaches 165 F or 75 C.
Make creamy tomato sauce. You’ll need to make the sauce in the same pan you cooked chicken. That way, the sauce will get all the beautiful flavor from the fried chicken. Fry some onions and garlic until they are soft and translucent. Don’t wait until the onions turn brown.
Once the onions are soft, fry tomato paste that’ll give the vibrant color and flavor to this creamy tomato chicken. I also like to add some real tomatoes to this sauce in the form of vibrant cherry tomatoes. You’ll also need some cream (light or heavy) and more Italian seasoning. Give this a quick stir and simmer for about 4-5 minutes. Season with salt and pepper.
Add pan fried chicken to the sauce. And then just heat through. Fresh herbs surely make any dish sing, so a generous sprinkle of chopped basil or parsley is a great addition.
To serve, quickly whip up a side of steamed rice, pasta or noodles. And done!

Delicious chicken in creamy tomato sauce
Ingredients
Marinate and fry chicken:
- 2 large chicken breasts
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1 tablespoon paprika
- 1/2 teaspoon cayenne pepper
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
Creamy tomato sauce:
- 1 tablespoon oil
- 1 garlic clove, peeled and chopped
- 1/2 cup chopped onions
- 2 tablespoons tomato paste
- 5 cherry tomatoes, halved
- 1/2 cup thickened (heavy) cream
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
- Chopped basil or parsley, to garnish
- Mashed potatoes, steamed rice, pasta or noodles, to serve
Instructions
- Slice each chicken breast horizontally into equal slices. Place them in a bowl. Add 1 tablespoon olive oil, garlic powder, paprika, cayenne pepper and Italian seasoning. Season with salt and pepper. Toss to coat chicken in the marinade.
- Meanwhile, heat 1 tablespoon in a large frying pan or skillet. Place chicken in a single layer. Cook each side for about 5 minutes or until the internal temperature reaches 75 C (165F). Cooking time may vary depending on the size of the chicken.
- Remove chicken from pan. Set aside.
- Add 1 tablespoon oil to the same pan over medium-high heat.
- When oil is hot, add onions and garlic. Sauté, stirring occasionally, for about 2-3 minutes or until soft.
- Add tomato paste. Sauté, stirring, for about 1 minute.
- Add cherry tomatoes, cream and Italian seasoning. Season with salt and pepper. Stir to combine. If the sauce is too thick, add a little water. Cook, covered, for about 4-5 minutes.
- Return fried chicken to the pan. Simmer for about 2 minutes.
- Garnish with basil or parsley.
- Serve with the side of your choice - mashed potato, rice, pasta or noodles.
