Ingredients

Marinate and fry chicken:

  • 2 large chicken breasts
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • 1 tablespoon paprika
  • ½ teaspoon cayenne pepper
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Creamy tomato sauce:

  • 1 tablespoon oil
  • 1 garlic clove peeled and chopped
  • ½ cup chopped onions
  • 2 tablespoons tomato paste
  • 5 cherry tomatoes halved
  • ½ cup thickened cream heavy cream
  • ½ teaspoon Italian seasoning
  • Salt and pepper to taste
  • Chopped basil or parsley to garnish
  • Mashed potatoes, steamed rice, pasta or noodles to serve

Instructions

  • Slice each chicken breast horizontally into equal slices. Place them in a bowl. Add 1 tablespoon olive oil, garlic powder, paprika, cayenne pepper and Italian seasoning. Season with salt and pepper. Toss to coat chicken in the marinade. 
  • Meanwhile, heat 1 tablespoon in a large frying pan or skillet. Place chicken in a single layer. Cook each side for about 5 minutes or until the internal temperature reaches 75 C (165F). Cooking time may vary depending on the size of the chicken.
  • Remove chicken from pan. Set aside.
  • Add 1 tablespoon oil to the same pan over medium-high heat.
  • When oil is hot, add onions and garlic. Sauté, stirring occasionally, for about 2-3 minutes or until soft.
  • Add tomato paste. Sauté, stirring, for about 1 minute.
  • Add cherry tomatoes, cream and Italian seasoning. Season with salt and pepper. Stir to combine. If the sauce is too thick, add a little water. Cook, covered, for about 4-5 minutes.
  • Return fried chicken to the pan. Simmer for about 2 minutes.
  • Garnish with basil or parsley.
  • Serve with the side of your choice - mashed potato, rice, pasta or noodles.
