Slice each chicken breast horizontally into equal slices. Place them in a bowl. Add 1 tablespoon olive oil, garlic powder, paprika, cayenne pepper and Italian seasoning. Season with salt and pepper. Toss to coat chicken in the marinade.
Meanwhile, heat 1 tablespoon in a large frying pan or skillet. Place chicken in a single layer. Cook each side for about 5 minutes or until the internal temperature reaches 75 C (165F). Cooking time may vary depending on the size of the chicken.
Remove chicken from pan. Set aside.
Add 1 tablespoon oil to the same pan over medium-high heat.
When oil is hot, add onions and garlic. Sauté, stirring occasionally, for about 2-3 minutes or until soft.
Add tomato paste. Sauté, stirring, for about 1 minute.
Add cherry tomatoes, cream and Italian seasoning. Season with salt and pepper. Stir to combine. If the sauce is too thick, add a little water. Cook, covered, for about 4-5 minutes.
Return fried chicken to the pan. Simmer for about 2 minutes.
Garnish with basil or parsley.
Serve with the side of your choice - mashed potato, rice, pasta or noodles.
