Easy apple turnovers. Cinnamon flavored apples baked into flaky puff pastry triangles. The filling is a simple combination of delicious apples caramelized with brown sugar and a touch of ground cinnamon. These sweet treats are guaranteed to make your taste buds sing.
Whether you are after a crunchy snack, layering a sweet sandwich, or baking your favorite dessert, apples are an autumn / fall staple. Obviously, there are plenty of ways to incorporate this gorgeous fruit into your diet, ranging from sweet to savory. What’s your favorite?
Apple turnovers. Very similar to hand pies, these feature apples cooked into flaky puff pastry. The sweetness of the apples is enhanced with the addition of brown sugar that caramelizes the fruit. Ground cinnamon is an optional addition and I really love the pop of flavor it brings to this dessert. You can serve these warm dessert pockets any way you like – vanilla glaze, whipped cream or ice cream.
Easy Apple Turnovers Recipe
Apple filling – For best results, use Granny Smith or any firm apple in this recipe. Chop them into small pieces and let it cook in butter for about 5-10 minutes. Wait until the apples turn soft. Add brown sugar, and cook the apples in sugar until they are caramelized. You can also add a little ground cinnamon for extra flavor. This mixture is the filling for the turnovers.
Prep and bake turnovers – I’m using ready-rolled puff pastry sheets in this recipe. Add add the filling to small squares and then fold over to seal. You’ll also need a couple of small holes on top to vent out the air. Brush the pastries with egg wash or milk to achieve that perfectly golden finish.
Vanilla Glaze – Even though these pastries are perfect with whipped cream or ice cream, a simple vanilla glaze is my go-to. It’s a decadent combination of icing (powdered) sugar, milk, and vanilla essence. Drizzle the mixture over the pastries for a sweet finish.

Easy Apple Turnovers
These homemade version of your favorite apple turnovers are loaded with cinnamon flavored caramelized apples
Ingredients
Filling:
- 2 tablespoons butter
- 3 medium apples preferably Granny Smith, cored, peeled, and cut into bite sized pieces
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
Egg wash:
- 1 egg
- 1 tablespoon water
Turnovers:
- 2 ready rolled puff pastry sheets, thawed
Glaze:
- 1/2 cup icing (powdered) sugar
- 2 tablespoons milk
- 1/2 teaspoon pure vanilla extract
Instructions
Make filling:
- Heat butter in a large frying pan or skillet over medium - high heat.
- Add apples. Cook, stirring occasionally, for about 5 minutes or until soft.
- Add brown sugar and ground cinnamon. Cook, stirring occasionally, for about 3-4 minutes or until the apples are caramelized.
- Remove from heat.
- Set aside to cool to room temperature.
Egg wash:
- Whisk together eggs and water in a medium bowl.
- Set aside.
Make turnovers:
- Preheat oven to 200 C / 350 F. Line a large baking tray with baking paper.
- Cut each pastry sheet into four equal squares.
- Place about 1 and 1/2 tablespoons of apple mixture in the center of each square.
- Leave about 1/2 inches at the edges.
- Brush the edges with egg wash.
- Fold over and press down the edges to make triangles.
- Use a fork to gently press down and seal the edges.
- Cut 2-3 slits on top of the pastry
- Transfer pastries to the baking tray.
- Brush with egg wash
- Place the tray on the center rack of the oven. Bake for about 20-25 minutes or until golden
- Remove from oven. Leave to cool slightly.
Vanilla glaze:
- Combine together sugar, milk, and vanilla extract in a small bowl. Add more milk to get the desired consistency. Set aside.
- Drizzle glaze over the pastries.
Notes
- A light sprinkle with powdered sugar, vanilla ice cream, or whipped cream are also perfect with these pastries
- Granny Smith apples are ideal in this recipe, however, feel free to substitute with any firm apple
