Chicken lo mein. A simple stir fry made with authentic Chinese sauces, delicious vegetables, succulent chicken and lo mein noodles. While the cornstarch gives you crispy chicken, the delicious sauce imparts the lovely authentic flavor and taste to this dish. Ready in under 20 minutes!
One of my most favorite things about cooking noodles is obviously the quick and easy feature. Prep a huge batch of noodles and you can unwind and relax after a busy day. I also love the harmonious blend of flavors and textures creating the perfect backdrop for your favorite protein and veggies.
Chicken lo mein. Simple stir fry consisting of lo mein noodles, veggies and chicken. The addition of authentic sauce made with regular soy sauce, dark soy sauce, oyster sauce and rice vinegar. Simply stir fry the noodles with the sauce for a delicious weeknight meal.
Easy Chicken Lo Mein Recipe
Prep the ingredients – This includes marinating chicken, making the sauce, cutting all the veggies, and cooking noodles. To marinate chicken, you’ll need a mixture of corn flour (cornstarch), soy sauce, Shaoxing wine and white pepper. The key flavor of these noodles comes from the unique combination of sauces used in this recipe including regular soy sauce, dark soy sauce, oyster sauce, chicken broth and sesame oil. Make sure the noodles are also cooked prior to starting the stir fry.
Make lo mein – Start with stir frying chicken until cooked through followed by sauteing garlic, ginger and onions. The vegetables need to be tender but crisp. The final step is stir frying cooked noodles and chicken in the sauce. Once done, give it a generous sprinkle of chopped spring onions.

Easy 20 Minute Chicken Lo Mein
Easy and delicious chicken lo mein for an easy weeknight dinner!
Ingredients
Marinate chicken:
- 600 g boneless chicken (I used chicken breasts), thinly sliced
- 2 teaspoons cornstarch (corn flour)
- 1 teaspoon soy sauce
- 1 teaspoon Chinese Shoaxing wine
- 1/2 teaspoon ground white pepper
- Salt to taste
Sauce:
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon dark soy sauce
- 1/4 cup chicken broth (stock)
- 1 teaspoon sesame oil
Noodles:
- 400 g lo mein noodles or your favorite noodles
- 1 tablespoon oil
- 1 small onion, sliced
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 2 cups vegetables (sliced carrots, onions, bell peppers or capsicum, spring onions or scallions)
- Chopped spring onions or scallions, to garnish
Instructions
Marinate chicken:
- Place chicken in a large bowl.
- Add cornstarch (corn flour), soy sauce, Shaoxing wine and ground white pepper.
- Coat chicken with the marinade. Season with salt. Set aside.
Make sauce:
- Combine together soy sauce, oyster sauce, dark soy sauce, chicken broth (stock) and sesame oil in a small bowl. Set aside.
Cook noodles:
- Cook noodles following the package directions. Set aside.
Make lo mein:
- Heat oil in a large wok or frying pan over high heat.
- Add chicken. Stir fry for 4-5 minutes or until cooked through.
- Cook chicken in batches if needed.
- Remove chicken from the pan.
- Add onion, ginger and garlic. Stir fry for a few seconds or until they are aromatic.
- Add vegetables. Stir fry for about 1 minute or until the vegetables are tender but crisp.
- Add fried chicken and cooked noodles.
- Add sauce. Stir fry for 2 minutes.
- Garnish with spring onions (scallions).
Notes
- You can also add other veggies like napa cabbage, broccoli, mushrooms etc.
- Although lo mein noodles are the classic option for this dish, feel free to use your favorite.
