Think chipotle mayonnaise, crisp cos lettuce, juicy tomatoes and pickled red onions piled onto buttered toasted burger buns. Absolutely delicious!
I love meat burgers, but how about veggie-centric burgers that are also quick to the table? To make the perfect burger, every element needs to bring in the right balance of flavors. Well, it’s the secret to making meals that are not boring.
These black bean burgers are loaded with the goodness of black beans. Paired with aromatic spices and veggies, these are perfect for a veggie packed meal. And the pickled onions is the cherry on top. Absolutely delicious!
Black Bean Burger Recipe
Make black bean patties – Just combine together black beans, onions, bell peppers, garlic, spices, breadcrumbs and oregano. Season with salt and pepper. Make sure all the veggies are finely chopped. You will also need to squeeze out the juice from onions. Before shaping the burger patties, gently mash them to get a coarse mixture. The shaped patties are then cooked.
Assemble the burgers – You can totally customize these burgers with your favorite toppings. I have added mayonnaise, lettuce, tomatoes and pickled onions.

Delicious and healthy burgers made with black beans paired with chipotle mayo, pickled onions and cos lettuce
Ingredients
Black bean patties:
- 1/4 cup grated onions
- 2 x 420 g canned black beans, drained and rinsed
- 1/4 cup finely chopped bell peppers (capsicum)
- 2 garlic cloves, peeled and minced
- 1 and 1/2 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/2 cup breadcrumbs
- 2 tablespoons chopped parsley
- 1/2 teaspoon dried oregano
- 1 tablespoon oil
- Salt and pepper to taste
Assemble:
- 3 tablespoon butter
- 4 brioche burger buns, halved
- 1/4 cup chipotle mayonnaise
- Lettuce
- Sliced tomatoes
- Pickled onions
Instructions
- Squeeze out the liquid from grated onions and place in a large bowl.
- Add black beans, bell peppers (capsicum), garlic, ground cumin, paprika, cayenne pepper, breadcrumbs, parsley and oregano. Season with salt and pepper. Mix.
- Using a fork or potato masher, mash the mixture lightly so you will get a coarse mixture.
- Divide the mixture into flour equal portions.
- Lightly wet your hands.
- Carefully roll the mixture into balls.
- Gently squeeze down to flatten into patties, about 3 cm thick. Set aside.
- Spread the burger buns with butter.
- Place them in a pan over medium heat, buttered side facing down. Toast. Set aside.
- Add oil to the same pan. Add black bean patties, in batches, and fry, flipping occasionally, for about 4 minutes on each side or until cooked through. Set aside.
- To assemble, spread the burger buns with mayonnaise. Place lettuce on the bottom bun and then layer with black bean burger patties, tomatoes and pickled onions. Place the top bun on the onions.
Notes
- Substitute regular buns with gluten free buns if you like. Also, use gluten free breadcrumbs.
- You can also add quinoa or oat flour to the mixture
