Sweetcorn sandwich. A delicious example of how simple corn can be converted into an incredible toasted sandwich in minutes. The filling is customizable and that makes this recipe so interesting. Add more finely chopped bell peppers (capsicum) and carrots for a healthy dose of veggies.
How To Make Corn Sandwich
First, make the element of this sandwich – the corn filling. It’s actually a very basic simple mixture of corn, grilled or boiled, carrots, onions and green chilies. I like to spice up the sandwich with a touch of chat masala and cheese makes this so good.
Next, let’s talk about the bread. Any bread taste amazing in this recipe, however, I prefer sourdough that’s a great base for all kinds of sandwiches.
Spread the bread with butter and spicy mayo or green chutney. Then top with the corn mixture. My favorite way to toast this sweetcorn sandwich is in a pan over the stovetop. However, you can also use a sandwich toaster to toast the sandwiches.

Sweetcorn sandwich loaded with cheesy sweetcorn filling and spiked with chat masala
Ingredients
- 1 cup boiled corn kernels
- 3 tablespoons grated carrot
- 2 tablespoons chopped onions
- 1 green chili, chopped
- 1/4 cup grated mozzarella
- 1/2 teaspoon chat masala
- Salt and pepper to taste
- 6 thick bread slices (Sourdough or your favorite)
- 100 g softened unsalted butter
- 1/4 cup sriracha mayo
Instructions
- To make the corn filling, combine together boiled corn, carrot, onions, green chilies, mozzarella and cheese in a large bowl. Season with salt and pepper. Set aside.
- Spread one side of the bread slices, first with butter and then mayo.
- Top one bread slice with corn mixture, and another bread slice.
- Repeat with the remaining slices and corn mixture.
- Spread the top bread slices with a little butter.
- Meanwhile, heat a small pan over medium low heat.
- Place the sandwich in the pan, buttered side down.
- Spread butter on the top bread slice.
- When one side is toasted and brown, flip over to brown the other side.
- Alternatively, you can grill these sandwiches.
Notes
- Mayo can be replaced with green chutney if you like
- More veggies like bell peppers can be added to the corn filling
