These easy beef sausage rolls are a must addition to your recipe repertoire – easy, delicious and satisfying. I also wanted to make it extra special and nutritious with the help of some hidden veggies – in this case, grated carrots. Apart from carrots, paprika, fresh herbs and a touch of tomato sauce (ketchup) level up the flavor profile of these easy peasy rolls.
Easy Homemade Beef Sausage Rolls
The key ingredient in this recipe is minced or ground beef. You can also substitute it with your favorite minced chicken, lamb, pork or veggies. The minced meat is combined with a few flavorful ingredients to level up the taste. This includes fresh parsley leaves and grated carrot.
While the breadcrumbs help to hold the minced meat together, a little pinch of red paprika improves the flavor. Trust me, it’s a delicious addition to these beef sausage rolls. Although grated carrots are totally optional in this recipe, it’s best way to sneak in some veggie goodness.
When the filling is ready, thaw the puff pastry sheets, place the meat mixture on one side of the pastry and roll. A light egg wash and a generous sprinkle of sesame seeds or poppy seeds make them perfect.
Finally, slice and bake. Let these rolls puff up into flaky goodness. Yum!

Ingredients
- 2 onions, peeled and grated
- 500 g minced (ground) beef
- 1/4 cup grated carrots
- 2 garlic cloves, peeled and finely chopped
- 1/4 cup breadcrumbs
- 1/4 cup fresh parsley leaves, chopped
- 1 teaspoon paprika
- 2 tablespoons tomato sauce (ketchup)
- 2 tablespoons sesame seeds or poppy seeds, to decorate the rolls (optional)
- 4 puff pastry sheets, thawed
- 1 egg, lightly beaten
- Salt and pepper to taste
- Tomato sauce (ketchup), to serve
Instructions
- Preheat oven to 220 C / 420 F. Line 3 large baking trays with baking paper. Set aside.
- Squeeze out excess liquid from onions. Set aside.
- Place beef, onions, carrots, garlic, breadcrumbs, parsley, paprika and tomato sauce (ketchup). Season with salt and pepper. Stir to combine. Divide into 8 equal portions. Set aside.
- Cut each puff pastry sheet in half. Place one portion of mince across the long side of pastry. Roll pastry over mince to enclose.
- Brush with egg. Sprinkle with sesame seeds if you like.
- Cut into 4 equal rolls. Place the rolls in the baking tray in a single layer, seam side down.
- Repeat with the remaining pastry and filling mixture. Bake for 30 minutes or until golden and cooked through.
- Serve with tomato sauce (ketchup)
Notes
- To freeze the sausage rolls, place the rolled rolls on a baking sheet and freeze for 3 hours. When they are hard, transfer to a zip lock bag and freeze for up to 3 months. To cook frozen rolls, brush them with beaten eggs and cook for 40 minutes.
- You can add a little cayenne pepper to the mixture if you like
- Carrots are optional in this recipe, however, it’s the best sneaky way to add more veggies to your diet
- I have used pre-rolled pastry sheets, but remember to roll out your sheets if needed. Remember to check the packet instructions.
