This classic upside down apple cake is totally addicting with the sensational combination of delicious flavors. Apples get caramelized in brown sugar elevating the beautiful sweetness of this cake. Trust me, it’s totally addicting!
How To Make Upside Down Apple Cake
Start the recipe with caramelized apples. First, we’ll make the mixture to caramelize the apples. But the actual process of caramelization will happen in the oven. And again, this step is key in this upside down cake recipe.
You’ll need to combine butter and brown sugar in a small saucepan. The sugar will gradually dissolve in butter, and within a minute or so, the mixture will start to thicken filling your room with sensational caramel flavor. Remember, stir the sugar mixture continuously and make sure not to burn it. Pour this mixture into the cake tin and you have the base layer of the upside down apple cake.
The sliced apples are arranged in the cake tin in a single layer. And in the oven, the apples absorb the sugar-butter mixture and start to caramelize. Again, I prefer sweet apples in this recipe, feel free to choose your favorite.
Next up, the cake batter. Flour, baking powder and salt are combined in a bowl. I also like to sift the ingredients to make the cake as airy as possible.
You’ll need to beat together soft butter and sugar until the mixture is very pale and fluffy. Add the eggs and beat to combine. The vanilla extract is the one essential component of all cakes. Now, mix in half of the sifted flour mixture and then the remaining mixture goes in.
Apart of the base of this upside down apple cake, I also like to add some chopped apples to the batter. This gives that lovely autumn flavor to the entire cake. Add a touch of ground cinnamon to the batter. Cinnamon and apples – truly match made in heaven. Once you fold in the chopped apples, transfer batter to the cake tin and bake for an hour.

Ingredients
- 110 g unsalted butter
- 1/2 cup brown sugar
- 2 large apples, cored, peeled and sliced into 2-inch thickness (choose your favorite sweet apple)
- 1 and 3/4 cups all purpose (plain) flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 125 g unsalted butter, softened
- 1 cup granulated (caster sugar)
- 2 eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1 cup cored, peeled and chopped apples (your favorite sweet apple)
- 1 teaspoon ground cinnamon (cinnamon powder)
- Vanilla ice cream, to serve (optional)
Instructions
- Preheat oven to 180 C / 350 F. Grease and line a 22 cm deep cake tin with baking paper. Set aside.
- Place 110 g butter and brown sugar in a saucepan over medium heat. Whisk until combined. Cook, whisking constantly, for about 1 minute or until the mixture thickens. Pour into the cake tin.
- Arrange the apple slices in a single layer in the cake tin. Set aside.
- Sift flour, baking powder and salt into a medium bowl. Set aside.
- Place 125 g butter and granulated (caster) sugar in a bowl. Using an electric mixer, beat until pale and fluffy.
- Add eggs, one at a time, beating to combine after each addition. Add vanilla extract. Beat until combined.
- Add half of flour mixture and beat until combined. Scrape down the sides of the bowl as required. Add remaining flour mixture and beat again until combined.
- Add chopped apples and ground cinnamon. Fold in gently. The batter will be slightly thick.
- Transfer the cake batter to the cake tin. Spread evenly with a spatula.
- Bake for 55 minutes to 1 hour or until a skewer inserted into the center of the cake comes out clean.
- Remove cake from oven. Leave to cool slightly in the pan, about 10 minutes. Then transfer on to a wire rack to cool completely.
- Slice and serve the cake warm with a scoop of your favorite ice cream if you like.
