How To Make The Best Leftover Turkey Sandwich
First, choose the base. To be exact, the bread. Your regular white or whole meal bread is going to taste absolutely delicious in this recipe. However, I want to level up the recipe and opt for sourdough bread.
Butter the bread on both sides and toast them in a fry pan over low heat. I just added an extra layer of dijon mustard to bring in that amazing flavor to the recipe.
This sandwich is totally customizable which means you can add your favorite leftovers to create the best version of your favorite turkey sandwich. I have opted for mashed sweet potatoes, sliced roast turkey, gravy, cranberry sauce and a few rocket leaves for that crisp freshness. Trust me, it’s absolutely delicious.

Leftover turkey sandwiches with layers of roast turkey, gravy, cranberry sauce, mashed sweet potatoes, dijon mustard and rocket leaves!

Ingredients
- 8 slices sourdough bread
- 4 tablespoons unsalted butter
- 4 tablespoons dijon mustard
- 2 cups leftover mashed potatoes or sweet potatoes
- 4 thick slices of leftover roast turkey
- 8 tablespoons leftover turkey gravy
- 2 tablespoons leftover homemade or canned cranberry sauce
- Handful of rocket leaves (arugula)
Instructions
- Spread butter on both sides of each bread slice. Set aside.
- Heat a medium frying pan or skillet over low heat. Place bread slices in a single layer. Cook, turning once, 2-3 minutes or until bread is toasted. Cook in batches if needed. Remove from pan. Set aside.
- Spread dijon mustard on one side of four bread slices and top with mashed potatoes or sweet potatoes, turkey, gravy, cranberry sauce and rocket leaves (arugula).
- Top with remaining bread slices. Serve warm.
