- Cook pasta– In this recipe, we’ll be cooking pasta in very little water. Drain the excess water and reserve about 2-3 tablespoons of water which actually goes back into the saucepan.
- Add evaporated milk – The one ingredient that converts this classic dish into a 3 ingredient masterpiece. It acts as a sauce thickener and is the secret to making creamy and smooth sauce. After adding evaporated milk, bring the mixture to a boil.
- Add cheese – Opt for grated cheddar in this recipe. I have used a combo of white and red cheddar, but you can opt for Gruyère or pepperjack for sharper flavor. Cook until the cheese melts and you have ooey gooey creamy mac and cheese

Creamy, dreamy mac and cheese made with just 3 ingredients!
Ingredients
- 2 and 1/4 cups elbow macaroni
- 250 ml evaporated milk
- 2 cups grated cheddar
- Salt to taste
Instructions
- Place 3 cups water in a large saucepan. Season with salt.
- Bring to a boil.
- Add macaroni. Stir and cook for about 6 minutes or 1 to 2 minutes shy of al dente.
- Reserve 3 tablespoons pasta water. Drain.
- Add reserved pasta water back to the saucepan.
- Add evaporated milk. Stir to combine.
- Simmer for about 2-3 minutes.
- Stir in cheese.
- Cook, stirring, for about 2 minutes or until the cheese melts and sauce thickens.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for about 2 days. To reheat, add a little evaporated milk and heat through.
