Ingredients

  • 2 and ¼ cups elbow macaroni
  • 250 ml evaporated milk
  • 2 cups grated cheddar
  • Salt to taste

Instructions

  • Place 3 cups water in a large saucepan. Season with salt.
  • Bring to a boil.
  • Add macaroni. Stir and cook for about 6 minutes or 1 to 2 minutes shy of al dente.
  • Reserve 3 tablespoons pasta water. Drain.
  • Add reserved pasta water back to the saucepan.
  • Add evaporated milk. Stir to combine.
  • Simmer for about 2-3 minutes.
  • Stir in cheese.
  • Cook, stirring, for about 2 minutes or until the cheese melts and sauce thickens.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for about 2 days. To reheat, add a little evaporated milk and heat through.
