Whether it’s lamb, beef, or pork, spicy meat fry is an absolute favorite in our household. We like them loaded with spices and full of flavor.
This recipe is simple to make, and obviously, a delicious way to cook from scratch. Cook diced pork along with spices in a pressure cooker, and then temper with more whole spices. That’s it!
As always you can add more or less chilly powder to suit your heat levels. And you can serve this spicy pork with rice, flatbread, or even in a roll.

Spicy Pork Fry (Pork Ularthiyathu)
This spicy pork fry is easy to make and extremely delicious.

Ingredients
- 500g pork, cubed
To Cook Pork in Pressure Cooker:
- 6-7 garlic pods, sliced
- 2 cm fresh root ginger, sliced
- ½ of an onion, sliced
- ½ teaspoon ground turmeric
- ½ teaspoon ground fennel seeds
- 2 teaspoon ground coriander
- 3 teaspoon garam masala
- 1 teaspoon chilly powder
- 1 ½ - 2 teaspoon white vinegar
- Few curry leaves
- Salt
Tempered Spices
- 3-4 teaspoon oil
- 1 teaspoon mustard seeds
- 2-3 teaspoon shallots or red onion, chopped
- 1-2 teaspoon coconut slices
- 1-2 dried red chillies, broken into pieces
- 2 cardamoms
- 5 cloves
- ½ of 1 cinnamon stick
- 1 star anise
- 1 bay leaf
- Few curry leaves
Instructions
- Cut pork into small cubes. Set aside. Slice ginger, garlic, and onion. Set aside.
- Place pork in a pressure cooker, and mix well with all the ingredients under “To Cook Pork in Pressure Cooker”. (NOTE: Do not add water). Cover the cooker with its lid, and cook over high flame until 5-6 whistles.
- When ready, open the lid of the cooker and simmer over a medium flame until all water dries out. Set aside.
- Meanwhile, place a heavy bottomed pan over medium heat. Heat oil in the pan, and add mustard seeds. Allow to splutter.
- Now add the whole spices (cardamom, cloves, cinnamon stick, star anise, bay leaf), and fry for a few seconds. Add the chopped shallots or onions and fry again until they get a light brown color. When done, add the coconut slices and curry leaves. Fry again for a minute.
- Throw in the cooked pork. Fry, stirring occasionally, until it gets a good color. Serve warm.
