The magical season is here right at our doorsteps. So how about a wonderful, Christmassy dessert to share with your family and friends? A totally awesome yet simple dessert to delight your senses. Layers of strawberries and cream. It sounds so good already, right?
I really love cakes and puddings for Christmas, but this time I decided to deviate from the traditional path, and make something special. When I made this parfait the very first time, everyone in the family just loved and loved it. That moment I decided it’s going to be this year’s Christmas dessert.
Strawberry jelly + strawberry cream + whipped cream = the best strawberry dessert ever.
Strawberry Jelly Parfait
Ingredients
To make strawberry jelly:
- 45 g strawberry jelly crystals
- 225 ml boiling water
- 2 strawberries sliced
To make whipped cream:
- 21/2 cups fresh cream
- ½ cup caster sugar
- ½ teaspoon vanilla essence
To make strawberry cream:
- 3 strawberries cut into halves
- ½ cup fresh whipped cream
Other ingredients:
- 2 strawberries sliced
- 4 mint leaves 2 for each glass, to decorate (optional)
Instructions
Make the jelly:
- Prepare the jelly according to the packet instructions. (I mixed the jelly crystals in the boiling water). Divide the mixture between two glasses. Place the sliced strawberries in the jelly mixture.Then leave it in the refrigerator to set. If possible, place the glasses in a slanting position, so the jelly will retain that shape when set.
Make whipped cream:
- Place cream, caster sugar, and vanilla essence in a deep bowl. Use an electric mixer to whip the cream. Set aside.
Make the strawberry cream:
- Place the strawberries to make the cream in a blender, and make a smooth puree. Mix together the pureed strawberries and ½ cup whipped cream. Set aside.
Arrange the layers:
- When the jelly is set, top it with the strawberry cream. Then add 2 cups whipped cream. Decorate with mint leaves.
