Instructions
Make the jelly:
Prepare the jelly according to the packet instructions. (I mixed the jelly crystals in the boiling water). Divide the mixture between two glasses. Place the sliced strawberries in the jelly mixture.Then leave it in the refrigerator to set. If possible, place the glasses in a slanting position, so the jelly will retain that shape when set.
Make whipped cream:
Place cream, caster sugar, and vanilla essence in a deep bowl. Use an electric mixer to whip the cream. Set aside.
Make the strawberry cream:
Place the strawberries to make the cream in a blender, and make a smooth puree. Mix together the pureed strawberries and ½ cup whipped cream. Set aside.
Arrange the layers:
When the jelly is set, top it with the strawberry cream. Then add 2 cups whipped cream. Decorate with mint leaves.

Notes
Once all the layers are ready to assemble, keep them in the refrigerator. Arrange them in layers just before serving.
