Peel and mash banana. Place it in a large bowl along with flour, sugar, ground cardamom and bicarb soda. Add water ( I used ¼ cup water) little by little to make a very sticky dough.
Meanwhile heat oil for deep frying in a deep pan over medium-high heat.
Apply a little oil to the palm of your hand. Make a ball with the dough. When the oil is hot enough, slide it into the oil. Fry, turning occasionally , until golden brown. Repeat until dough is used up.
Drain them on an absorbent towel.
Serve hot bondas with tea or coffee.
Notes
Traditional bondas are made with plain flour or all-purpose flour. However, you can use wholemeal plain flour or whole wheat flour in the recipe If the banana is not sweet enough, add more sugar
