Heat a large frying pan or wok over high heat until very hot.
Add oil. Add onions and garlic. Cook, stirring, for about 2 minutes or until the onions are soft and translucent.
Add vegetables. Season with salt and pepper. Cook, stirring, 2-3 minutes or until the vegetables are tender but crunchy.
Move the veggies to one side of the pan. Pour in the eggs mixture. Using a spatula, break up the egg into smaller pieces while cooking.
Add turkey and cooked rice. Pour in soy sauce, tomato sauce and chili sauce (if using). Stir fry for another 2 minutes.
To serve, divide fried rice among four serving bowls.
Garnish with spring onions (scallions).
