Ingredients

  • 2 tablespoons oil preferably sesame oil
  • ½ cup chopped onions
  • 2 garlic cloves chopped
  • 3 cups chopped vegetables carrots, capsicums or bell peppers, green peas
  • 2 large eggs lightly whisked
  • 3 cups shredded leftover turkey
  • 4 cups cooked rice basmati or long grain, preferably cold leftover rice
  • 1 tablespoon soy sauce
  • 1 tablespoon tomato sauce
  • 1 teaspoon chili sauce optional
  • Salt and pepper to taste
  • Chopped spring onions scallions, to garnish

Instructions

  • Heat a large frying pan or wok over high heat until very hot.
  • Add oil. Add onions and garlic. Cook, stirring, for about 2 minutes or until the onions are soft and translucent.
  • Add vegetables. Season with salt and pepper. Cook, stirring, 2-3 minutes or until the vegetables are tender but crunchy.
  • Move the veggies to one side of the pan. Pour in the eggs mixture. Using a spatula, break up the egg into smaller pieces while cooking.
  • Add turkey and cooked rice. Pour in soy sauce, tomato sauce and chili sauce (if using). Stir fry for another 2 minutes.
  • To serve, divide fried rice among four serving bowls.
  • Garnish with spring onions (scallions).
