Caramelized onions:

large red onions

Instructions
Sumac chicken:
Preheat oven to 180 C / 350 F. Line a baking tray with parchment paper. Set aside.
Place chicken in a large bowl. Add minced garlic, sumac, ground all spice, olive oil and lemon juice. Season with salt and pepper.
Toss to coat.
If you have time, cover and marinate for about 15 minutes in the refrigerator.
Transfer chicken to the baking tray.
Bake for 20-30 minutes or until the chicken thighs are cooked through.
Caramelized onions:
Meanwhile heat oil in a large frying pan over medium heat.
Add red onions. Sauté, stirring occasionally, 3-4 minutes or until onions turn soft and translucent.
Sprinkle with sumac. Season with salt.
Sauté again, stirring constantly, 2-3 minutes or until the onions start to brown.
Remove from heat.
Assemble:
Heat the bread following the packet directions until toasted and warmed.
Arrange breads on a large serving platter in a single layer.
Arrange the baked chicken and onions on top.
Garnish with almonds, sumac, parsley and pomegranate arils (if using).
Drizzle the roasting juices on top.
