250gregular or wholemeal pasta of your choiceI used small spirals
½cupchopped red bell pepperscapsicum
1cupsliced cucumbers
1cupsliced red onions
1cupcherry tomatoescut into halves
¼cupchopped parsley leaves
Balsamic vinaigrette:
1teaspoonminced garlicgarlic paste
2tablespoonlemon juice
2teaspoonfinely chopped parsley leaves
½teaspoonground cumincumin powder
½teaspooncayenne pepper
3tablespoonbalsamic vinegar
½cupolive oil
Salt and pepperto taste
Instructions
Pasta salad:
Cook pasta according to packet instructions. Drain. Let it cool slightly.
Divide pasta among 4 serving bowls. Top with bell peppers, cucumbers, onions, tomatoes and parsley leaves.
Balsamic vinaigrette:
Place garlic, lemon juice, parsley, ground cumin, cayenne pepper, balsamic vinegar and olive oil in a small jar. Season with salt and pepper. Close lid tightly. Shake vigorously for 30 seconds.
Pour vinaigrette over salad. Toss.
Sprinkle with red chili flakes.
