Spicy Green Beans | Video

Spicy green beans sauteed with garlic and red chili flakes. Coconut flakes add the perfect crunch!

Ingredients

  • 1 kg green beans ends trimmed
  • 1 tablespoon olive oil
  • ¼ cup coconut flakes
  • 2 garlic cloves peeled and chopped
  • 1 teaspoon red chilli flakes red pepper flakes
  • Salt and pepper to taste

Instructions

  • Bring a large pot of water to boil.
  • Add green beans. Blanch for about 3 minutes or until bright green in color and tender crisp. Drain.
  • Add to a bowl of ice water. Drain. Blot dry.
  • Heat a large frying pan or skillet over medium heat.
  • Add oil. Add coconut flakes. Fry, stirring, for about a minute or until golden. Remove from pan. Set aside.
  • Add more oil if needed.
  • Add garlic. Sauté, stirring, for a few seconds or until fragrant.
  • Add green beans and red chili flakes. Season with salt and pepper.
  • Continue to sauté for about 5 minutes or until the green beans are coated in oil and heated through.
  • Top with toasted coconut flakes

Notes

  • You can add a little butter to the green beans if you like
  • The addition of fried bacon certainly improves the taste
  • I highly recommend using fresh green beans in this recipe.
