Croutons:

loaf of bread
I used sourdough, preferably a day old, cut into ¾ -inch cubes

olive oil

cayenne pepper or red chili powder

garlic powder

Salt and pepper to taste
Tempering:

oil

mustard seeds

chopped onions

green chili

▢

ground turmeric

sprig of curry leaves
▢

tablespoons
chopped coriander
cilantro leaves

Juice from 1 small lemon
Instructions
Croutons:
Preheat oven to 190 C or 375 F. Line a large baking sheet with baking paper.
Add bread cubes.
Drizzle with olive oil.
Add cayenne pepper and garlic powder. Season with salt and pepper.
Toss until well combined.
Spread the bread cubes in a single layer.
Bake for about 10-15 minutes or until crisp and golden, turning once halfway through cooking.
Remove from oven. Set aside.
Once cooled, store in an airtight container for up to a week, and add tempered spices just before serving.
Tempering:
Heat oil in a large frying pan over medium-high heat.
Add mustard seeds, onions, green chilies, ground turmeric, and curry leaves.
Stir fry for 30 seconds.
Add croutons. Toss.
Stir in coriander (cilantro) leaves.
Squeeze in lemon juice.
Toss and heat through.
