Ingredients

  • 2 x 90 g soba noodles
  • cup chopped spring onions scallions
  • 1 tablespoon sesame seeds
  • 2 tablespoon chopped toasted cashew nuts or peanuts
  • Chopped spring onions scallions and cashew nuts, to garnish
  • Sesame dressing:
  • 4 tablespoon sesame oil
  • ½ teaspoon dried red chili flakes
  • ½ teaspoon fresh ginger cut into sticks
  • 2 tablespoon soy sauce
  • 2 tablespoon honey

Instructions

  • To make sesame dressing, heat sesame oil and red chili flakes in a saucepan over low heat. Cook, stirring, for a few minutes. Remove from heat. Leave to cool completely. Stir in fresh ginger, soy sauce and honey. Stir to combine. Set aside.
  • Cook soba noodles according to packet directions. I cooked the noodles in boiling water for about 3 minutes. Drain and rinse under cold water. Set aside.
  • Place soba noodles in a bowl. Pour in sesame dressing. Add spring onions (scallions) and sesame seeds. Toss.
  • Garnish with more spring onions, sesame seeds and cashew nuts.

Notes

- Toss in more veggies like shredded red cabbage and choysum.
- Top with your favorite protein - tofu, shrimp, chicken or steak to convert it into light lunch or dinner. Marinate with 1 tablespoon chili paste and 2 teaspoon ground cumin, season with salt, and cook with perfection.
